I am NOT a morning person; I AM a snooze button queen. Needless to say, getting to work for 8AM is always a struggle. This sometimes makes it hard to eat a healthy breakfast. It would be much easier to run through a fast food drive through line, but, not ideal for healthy living. With all the travel I do, I have made it a priority to eat healthy as much as possible. My recent post on meal prepping as you go is just one of the things I have adopted over the years to help speed up my morning routine.
Making a menu and grocery shopping for the week are things I like to do but admittedly not something I am very good at keeping up with. To help combat my lack of planning, I tend to keep certain staple foods on hand beyond the normal bread and milk. I also use an APP on my iPhone called Meal Board for my grocery list. Anytime I run out of one of my ‘staple’ items, I enter it in the APP. It was hard for me to go paperless when it came to my grocery list, but now that I have, I love it. Below is a list of pantry items I tend to keep on hand, plus a few of my go to breakfast meals. With just a little prep, these breakfasts pull together in no time. - Banana
- Mayonnaise
- Salt, Pepper, Cinnamon
Monday: Egg/Avocado Toast
Tuesday: Peanut Butter/Banana Tacos
Wednesday: Turkey/Sun-Dried Tomato Omelet
Thursday: Instant Oatmeal & Banana
Friday: Egg Sandwich w/cheese
