What’s the first meal that comes to mind when you think of camping? Throwing burgers on the grill? Maybe some corn on the cob? Watermelon? Don’t forget the s’mores! I for one tend to crave that first grilled burger of the season. And nothing beats the smell of a good cookout! Are you hungry yet?
Don’t get me wrong, one of the best things about exploring a new area is finding that great restaurant that all the locals swear by. And I certainly have hit a fast food drive through a time or two, but too much of anything gets old after a while.
One of the things I like about traveling in our RV is that I have a mini kitchen with me! In fact, the cover photo of this post was prepared in a rest area at the halfway point of our latest trip. Fresh grilled chicken tenders, with lemon seasoned broccoli and potatoes, delicious! Took only minutes to prepare in the microwave using my new favorite gadget, the Microhearth Grill Pan.

Micro hearth Grilled Chicken
1 package Chicken tenderloins
Italian Seasoned Breadcrumbs
Sweet Baby Ray’s BBQ Sauce
Cooking spray
That’s it, really!
Spray the Microhearth grill pan with cooking spray, put breadcrumbs and chicken tenders in a bag and shake, shake, shake. Place in a single layer in pan, spray with cooking spray, cover and microwave on high for four minutes. Turn chicken tenders over, cover and microwave an additional two minutes. Serve with Sweet Baby Rays barbecue sauce.
Micro hearth Roasted Potatoes
Russet Potatoes washed, and sliced
Olive oil
Seasoning of choice (I used Montreal Chicken Seasoning)
Spray pan with cooking spray, toss potatoes with olive oil and seasoning and place in a single layer in pan, cover and microwave four minutes, turn over, cover and microwave an additional two minutes.
Lemon Pepper Grilled Broccoli Flowerets
Broccoli flowerets
Olive Oil
Lemon Pepper Grinder Seasoning
1 Lemon
Wash broccoli flowerets and toss with olive oil and lemon pepper grinder seasoning. Squeeze juice from one lemon over broccoli, cover and microwave four minutes. Stir, cover and microwave an additional two minutes.
